Place salmon in shallow dish. Combine soy sauce, 2 tbsp of lime juice, honey, and lime rind. Pour over salmon; turn to coat both sides. Cover dish with plastic wrap and refrigerate for 30 to 60 minutes.
Turn salmon once. Remove salmon and discard marinade.
Combine peaches and jalapeño (if desired), cilantro, and 1 tsp of lime juice. Set aside.
Grill over medium high heat for 5 to 6 minutes on each side while brushing every minute or two with the peach glaze. Remove from grill when flesh is opaque and flakes easily with a fork.
